Cook time: 12 minutes
Boil a large pot of salted water, add half the box of pasta + cook 10-12 min or until al dente, then drain + return to pot
Meanwhile, wipe mushrooms with a damp paper towel, remove stems + scoop out gills; thinly slice, heat 1 tbsp oil in a skillet over med-high + sauté 3-4 min until tender; add salt/pep
Wash + dry parsley; remove stems + roughly chop; zest + juice lemon
Add mushrooms, parsley, lemon zest + juice + 3-4 tbsp sauce to pasta; toss to combine + divide between to bowls꠳yuuuum!
