Cook time: 12 minutes
Wash, then slice both zucchinis into ¼-inch rounds; heat 1 tsp oil in a 12-inch skillet or large pot over med-high, add to pan, season with salt/pep + sauté 4-5 min until tender; set aside
Heat 1 tbsp oil in skillet over med-high; pat chicken dry, season with taco seasoning + salt/pep; cook chicken 4-6 min each side until fully cooked, no pinkness remains + internal temp is 165°
Divide zucchini to plates with chicken on top; garnish with 2-3 tbsp salsa over each—wow that looks great!
