Cook time: 17 minutes
Wash, then slice zucchini into ¼-inch rounds; heat 1 tsp oil in a large skillet over med-high; add to pan, season with salt/pep + sauté 4-5 min until tender; divide to bowls
Wipe mushrooms clean + thinly slice; heat 1 tbsp oil in skillet over high, add mushrooms + cook undisturbed 3 min; sauté 3-4 min until browned + tender, season with salt/pep + divide to bowls
Heat 1 tbsp oil in skillet over medium; cook 8 falafel 2-3 min per side until browned + hot; divide among bowls
Dollop each bowl with 2 tbsp tzatziki + serve with a wedge of lemon
